Everyday Kichari

INGREDIENTS:

Serves 4-6

6 cups water

1 cup basmati rice

1/2 cup yellow split mung dal (ideally soaked for 1 hour or more)

1 tbsp everyday savoury spice mix

pinch of asafetida (hing) powder (optional)

2 cups of vegetables of your choice (I’m using potatoes, carrots, butternut squash, kale & spring greens), coarsely chopped into 1.2 inch cubes. Chop greens into strips

1 tsp salt

freshly chopped parley and coriander to garnish 

FOR THE TEMPERING:

1-2 tbsp ghee

1/2 tsp cumin seeds

1/2 coriander seeds

1/2 tsp fennel seeds
